The flavor and texture of keto bread are somewhat nutty and spongy. It also has a somewhat eggy flavor and is a bit sweet. Even though it is a little denser, the texture resembles conventional bread. It has a generally mild taste and a somewhat chewy texture.
Combine the dry ingredients - In a mixing bowl, whisk together the almond flour and baking powder until well blended.
Add the wet ingredients - Crack 1 egg into the dry ingredients. Pour in 1/4 cup of warm water. Add a pinch of salt and mix until a smooth, thick batter forms.
Pour into a baking dish - Grease a microwave-safe baking dish with oil or butter so the bread doesn't stick. I like to use a square dish for the perfect bread shape. Pour the batter into the dish. Smooth the top evenly with a spatula.
Microwave for 2 minutes - Microwave on high power for 2 minutes. Don't walk away, as cooking times can vary. You want the bread fully cooked through and risen.
Cool and serve - Carefully remove the dish from the microwave. Allow the keto bread to cool for 5-10 minutes before slicing and eating (or it will fall apart).
