Ingredients
  

  • 1 head of cauliflower cut into florets
  • 1/2 cup shelled pistachios
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 2 cups shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 3 tablespoons grated Parmesan cheese

Instructions
 

  • Preheat oven to 375°F.
  • Place the cauliflower florets in a single layer on a baking sheet. Drizzle with olive oil and sprinkle with sea salt and black pepper—Roast for 20 minutes or until the florets are tender.
  • Meanwhile, heat a large skillet over medium heat. Add the pistachios, garlic, red pepper flakes, black pepper, oregano, and thyme. Cook, stirring constantly, for 3 minutes.
  • Add the shredded mozzarella cheese and heavy cream to the skillet. Stir until the cheese is melted and the sauce is creamy.
  • Remove the cauliflower from the oven and transfer to a large baking dish. Pour the cheese sauce over the cauliflower and sprinkle with Parmesan cheese.
  • Return to the oven and bake for 15 minutes until the cheese is bubbly and golden brown.
