Pasta is one thing that many people miss when they are on the keto diet. There is something about some nice noodles that zucchini spirals can't compare to. Maybe you don't want to purchase those expensive keto friendly noodles on Amazon. What if I told you there is a keto pasta recipe out there that actually tastes good? Keto Pasta Recipe
Ingredients:
- 1 cup of finely ground almond flour
- 2 tsp of xantham gum
- 2tbsp + 1/2 tsp of psyllium husk powder
- 1/2 tsp of salt
- 2 large eggs
Pour 1 cup of finely ground almond flour directly on a clean countertop.
Add 2 tsp of xantham gum
Add 2tbsp + 1/2 tsp of psyllium husk powder
Add 1/2 tsp of salt. Then mix all the ingredients together with a fork. Make sure to break up the clumps.
Add 2 large eggs. Wisk the eggs in the center of the powder using a fork.
Slowly bring in more of the powder mixture from the outer edges of the mix.
As the dough thickens, switch to kneading by hand.
Form the mixture into a ball and let it sit on the counter top for about 2 minutes.
Cut the ball into for parts. Then roll each part between a piece of parchment paper.
Cut the dough into strips using a pizza cutter. You could also use a pasta maker if you have one. When you are done sprinkle a small amount of psyllium husk powder onto the noodles so they don't stick together.
Add the pasta to a pot of boiling water. Cook for 1-2 minutes.
Strain the water out. Don't let it sit for very long as the keto pasta may stick together.
Add your favorite keto friendly sauce, such as Alfredo, and enjoy.
