Keto Lemon Bars

Keto Lemon Bars

Ingredients:

For the crust:

For the lemon filling:


keto lemon barsAdd two cups of almond flour to a mixing bowl

Add 1/2 cup of stevia and mix.

Add 1 cup of melted unsalted butter.  Mix thoroughly.


keto lemon barsAdd 1/2 tsp of almond extract.


keto lemon barsGive the mixture one final mix.


Line a 9"x13" baking dish with parchment paper and pour in the mixture


keto lemon barsSpread as evenly as possible. Bake at 350 degrees for 25-30 minutes or until the edges brown.

Zest the lemons, taking just the yellow outer part.


keto lemon barsThen juice the 4 lemons.


keto lemon barsFilter the lemon juice to remove any seeds.


keto lemon barsIn another mixing bowl, add 1 1/2 cup of stevia.


keto lemon barsAdd 1/4 cup of almond flour and 1/4 tsp xanthan gum


keto lemon barsMix with a whisk then switch to a rubber spatula to break down any clumps


keto lemon barsAdd 4 beaten and room temperature eggs to the mixture.


keto lemon barsAdd the lemon zest and juice the mix again with the whisk


keto lemon barsLet the crust cool for a little bit then add the lemon mixture to the pan. Place back into the 350 degree oven for about 20 minutes.


keto lemon barsWhen it's done leave it uncovered and let cool for at least one hour. Then cover with foil and refrigerate for 2 more hours.


keto lemon barsRemove the lemon bars from the baking dish and place on  a cutting board.

keto lemon barsSprinkle the tops of the bars with powdered stevia. Serve.
