Keto Lemon Bars
Ingredients:
For the crust:
- 2 cups Almond flour
- ]1/2 cup stevia
- 1/2 tsp almond extract
- 1 cup unsalted butter (2 sticks), melted
For the lemon filling:
- 1 1/2 cups stevia
- 1/4 cup Almond Flour
- 4 large room temperature eggs, beaten
- 4 lemons, zested and juiced
- 1/4 tsp xanthan gum
- Powdered Stevia for topping
Add two cups of almond flour to a mixing bowl
Add 1/2 cup of stevia and mix.
Add 1 cup of melted unsalted butter. Mix thoroughly.
Add 1/2 tsp of almond extract.
Give the mixture one final mix.
Line a 9"x13" baking dish with parchment paper and pour in the mixture
Spread as evenly as possible. Bake at 350 degrees for 25-30 minutes or until the edges brown.
Zest the lemons, taking just the yellow outer part.
Filter the lemon juice to remove any seeds.
In another mixing bowl, add 1 1/2 cup of stevia.
Add 1/4 cup of almond flour and 1/4 tsp xanthan gum
Mix with a whisk then switch to a rubber spatula to break down any clumps
Add 4 beaten and room temperature eggs to the mixture.
Add the lemon zest and juice the mix again with the whisk
Let the crust cool for a little bit then add the lemon mixture to the pan. Place back into the 350 degree oven for about 20 minutes.
When it's done leave it uncovered and let cool for at least one hour. Then cover with foil and refrigerate for 2 more hours.
Remove the lemon bars from the baking dish and place on a cutting board.
Sprinkle the tops of the bars with powdered stevia. Serve.
