If you're on the keto diet for long enough you start to crave things like cake. Cake is a big part of social life. It's often served at office parties, special occasions, and birthday parties. It's one of those things that is really hard to avoid on keto. We all know that cake is loaded with sugar and flour, so there is no way it can fit into the keto diet. What if there was a delicious keto friendly cake out there? Today we have an amazing keto cake recipe for you. Check out the steps below.
Keto Cake Recipe
Ingredients:
- Sprinkles:
- 4 heaping tbsp unsweetened coconut flakes
- Liquid food coloring
- Cake
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1/3 cup water
- 1/3 cup sugar substitute
- 100g melted butter
- 3 eggs
- 2 cups almond flour
- 1 tsp baking powder
- Icing:
- 8oz cream cheese
- 4 oz cacao butter
- 6 1/2 tbsp powder sweetener
- 1 tsp vanilla
Add a few drops of food coloring to your shredded coconut "sprinkles" and mix until the coconut is colored. Repeat this step for each color you would like to add.
For the cake, Add 1/2 cup of sour cream to a mixing bowl.
Add 1 tsp of vanilla extract.
Add 1/3 cup of water to your mixture.
Mix the ingredients then add 1/3 cup of a sugar substitute.
Add in 100g (3.5oz) of melted butter and mix well.
Add 3 large eggs into the mixture and stir well.
Add 2 cups of almond flour and 1 1/2 tsp of baking powder. Mix well.
Pour half the mixture into a 7" round cake pan that is lined with parchment paper.
Add your sprinkles then mix. Bake the cake at 350 for 30 minutes. Then pour the second mixture into a cake pan and bake your second layer.
For the icing, add 4oz of cacao butter to a saucepan. Melt slowly.
Add 3 1/2 tbsp of powdered sweetener replacement to the melted cacao butter.
Pour the mixture into a bowl and let it cool.
In another bowl mix 2 8oz blocks of cream cheese with a hand-held mixer.
Slowly add in the hardened cacao butter mixture and mix.
Add 1/2 tsp of vanilla extract and continue mixing.
Add 3 tbsp of the powdered sweetener and mix again.
Spread some of the icing on top of the first layer of cake. Then set the second layer on top of the icing.
Spread the rest of the icing over the entire cake.
Coat the cake with your coconut sprinkles.
Serve and enjoy!
