Cauliflower and Pistachio Cheesy Bake

For the Cauliflower

1 tsp olive oil

300 grams cauliflower florets

2 cloves garlic

1 tsp salt and pepper


For the Cheese Sauce

1 ounce Gruyere cheese

2 ounces lite mozzarella

1/2 cup whole milk

1 tsp whole wheat flour

25 grams onion

1/2 tbsp butter For the Topping

1/2 ounce lite mozzarella

1 tsp Parmesan cheese

1/2 ounce pistachios crumbled


Heat the olive oil on a non-stick pan and fry the garlic lightly, before adding the cauliflower, and roasting it until it browns, mixing in the salt and pepper. In the same pan, heat the butter in the pan, and fry the onions for a minute, before adding the flour and mixing it. Mix in the milk, and stir until the milk begins to thicken before adding the mozzarella and gruyere cheese, and stir until it becomes a cheesy pot of deliciousness. Fill a baking dish with the cauliflower, mix in the cheese sauce, and top with the mozzarella, parmesan, and crumbled pistachios. Bake at 450 degress Farenheit for 5-10 minutes, or until the cheese is browned and the dish looks delicious. Enjoy!
