Ginger Scallion Aioli Ingredients:
½ cup avocado oil
¼ cup mayonnaise
3 scallions
1 tablespoon ginger
1 tablespoon garlic
2 tablespoon aged sherry vinegar
2 tablespoon spicy mustard
1 tablespoon pickapeppa sauce
1 tablespoon coconut aminos
Ginger Scallion Aioli Instructions:
Chop scallions and place all ingredients in blender or a container if using a stick blender.
Blend all ingredients until smooth
Jerk Chicken Tenders Ingredients:
2 lbs chicken breasts
2 tablespoon avocado oil
2 tablespoon jerk seasoning
1 tablespoon pickapeppa sauce
Jerk Chicken Tenders Instructions:
Slice chicken breasts into ½ inch thick slices.
In a mixing bowl combine avocado oil, pickapeppa sauce and jerk seasoning.
Add chicken and massage the marinade onto the chicken. Chill for at least 30 minutes or overnight.
Place chicken tenders in the air fryer basket and cook for 20 minutes at 370 degrees F. Internal temp should be 165 degrees. You can always cut the thickest one in half to check for doneness. recipe Link
