Sweets are one of the things many people miss on the keto diet. One of many peoples favorite sweets are good old homemade chocolate chip cookies. What if I told you that you could eat delicious chocolate chip cookies and stay in ketosis? This keto cookie recipe will make you forget about your mom's homemade cookies.
Ingredients for our Keto Cookie Recipe
- 1 stick of butter
- 1 1/2 cups almond flour
- 1/2 cup erythritol powder
- 1 tsp vanilla extract
- 1 1/2 tsp baking powder
- 1 1/4 tbsp beef gelatin powder
- 1/2 cup Lilly's chocolate chips
- 1 egg
In a large bowl, melt a stick of butter in the microwave.
Add 1 and 1/2 cups of almond flour to the melted butter.
Then add 1/2 cup of powder erythritol and a teaspoon of vanilla.
Add 1 1/2 teaspoon of baking powder and 1 1/4 tablespoon of beef gelatin powder.
Mix all the ingredients together in the bowl. Add an egg and continue to mix.
Add 1/2 cups of Lilly's chocolate chips and mix with a spatula.
Line a baking sheet with parchment paper and place the cookies on the paper.
Slightly flatten the cookies with your fingers. Place in the oven at 350 for about 15 minutes. Check the cookies at 15 minutes as they may need to bake for a little bit longer.
